PAUL LARKIN HAVERSTOCK
December 3, 1947 - December 25, 2022


Paul was born in Winnipeg to a Canadian father, George and a Scottish mother, Mary. They would take Paul to Scotland as an infant, where he grew up the third of eight siblings.
He started work at age 14 as a busboy, then waiter at a hotel in Lanark. He joined British Rail Hotels, working in Perth, then Gleneagles for seven years. Entering their exchange program allowed him to spend a year in Grenoble, France and year in Canada working at the Fort Garry Hotel. Having returned to Scotland, he met Julie, got married, found work in Lanark again and had a family of three sons. So taken with Winnipeg, in 1975 Paul moved with his family from Scotland to Canada to make a better life; and we did, with the loving help of family friends, Doris and Jimmy Boyce and their family.
Paul returned to the Fort Garry Hotel as a Restaurant Manager and moved to the Winnipeg Inn's Velvet Glove Restaurant to be Maître D'hôtel. He advanced to Director of Catering, an unfaltering presence as the hotel changed brands to the Westin Winnipeg and currently the Fairmont. He organized the special moments in people's lives, weddings, bar mitzvahs, graduations, Royal tours, holiday celebrations and caterings about anywhere people could dream. He took boundless joy and satisfaction being able to play "Santa" for so many years at the hotel's staff Christmas party.
At 55 years of age, Paul returned to the hotel where he began his career in Winnipeg, the Fort Garry and worked until his retirement at the age of 70. He could not relax! Doug Stephen sought him out and so started another stint of catering at the Millennium Center for WOW Hospitality.
Paul had a wonderful and enjoyable career, meeting so many interesting and famous people. He wanted me to pass along a big Thank You to all those he worked with. You know who you are.
Paul was greatly committed to the Winnipeg community and proud of his culture. For many years, a member of the St. Andrew's Society of Winnipeg and honoured to serve as its President. He was a founding member of The Scottish Gentlemen's Club, which was dear to his heart.
Foremost in Paul's heart was family. We travelled to the UK almost yearly to keep in touch with his siblings, Janey, Philip, Thomas, Gerard, John, James, Juliann, their spouses, his adoring nieces and nephews, of whom there are many and Julie's family.
Left with treasured memories are his loving wife of 52 years, Julie; sons and daughters-in-law, Adam and Nadeen, Lee and Maureen, Mark and Monika and grandchildren, Mike, Ethan and Emilie.
Paul took immense pride in holidaying with Mike and Ethan in Nova Scotia, the UK and Disneyworld.
Afternoons at the local pool, for a swim and picnic of watermelon and chips with "Poppa", will be dearly missed by Emilie, his "Favourite Granddaughter"!
Paul managed his illness with strength and grace. Our family sends a big Thank You for all your kindness and generosity showered on us at this sad time. We wish to express our profound gratitude for the excellent care given to Paul by the staff of 8A St. Boniface Palliative Care Unit.
Cremation has taken place. A Celebration of Life will be held at the Masonic Memorial Centre, 420 Corydon Avenue, Winnipeg on Saturday, January 21, 2023 at 2:00 p.m.
In lieu of flowers, the family kindly requests those who wish to express sympathy to consider donating to their favourite charity or the St. Boniface Hospital Foundation in Paul's name.

  • We just heard the heartbreaking news of Paul’s passing. Our hearts go out to you Julie and family as you grieve this devastating loss. I, Marlene started working in the Velvet Glove in November of 1975 the same month Paul started in the Velvet Glove. Gord worked with Paul in banquets and many years beyond that at the Westin/Fairmont. He was a joy to work with. Great sense of humour, wonderful with guests, professional, engaging, and so down to earth. He made an amazing contribution to the hospitality industry in Winnipeg.   • I started working at the Winnipeg Inn in 1979. Throughout all the name changes and the new faces always coming and going, nearly all of my memories of being there have Paul in them. Even at the most stressful of times, being around Paul made it seem a little less like work and a little more like fun with family. He was a great guy and it was my privilege to know him.   • My sympathies to Julie and family. I met Paul in July of 1978, he hired me as a busboy for the Velvet Glove. That was going to be a start of a great friendship in the Hospitality Industry. Paul was my mentor, he taught me everything I need to know about the service industry, I would not have been successful without his guidance and especially the trust he had in me. Those early years at the Winnipeg Inn will be the most memorable that I still hold close to me and still talk about today. Paul thank you for believing in me, you will be missed.   • I was so sorry to hear of Paul’s passing. I had the good fortune of working on Royal visits and various other special events when Paul was at the Westin/Fairmont. He was such a pleasure to deal with, so incredibly efficient and such a gentleman. The last time I saw him was in the Oval Room at the Fort Garry Hotel. He never forgot a face and was always keen on chatting and reminiscing. He was a prince of a man and he will be missed.   • I worked both full and part time with Paul at the Westin Hotel between 1980-87. I had many opportunities to speak with Paul as well as work catering events with him. A fond memory was spending a day with Paul at RBC creating a massive cake for the Kelvin Clippers 75th Anniversary. I have a great photo of us working on that project. Paul was always willing to lend a hand. He was also the one who coordinated my wedding at The Westin in ‘86. I was thankful for Paul’s professionalism, but more importantly his friendship, during my years working with him.   • I remember working along side Paul in both Banquets, but as well as during several prominent functions as well as the video shoot for the hotel turning 100. I remember when my father started at the hotel and during the childs christmas parties where he played santa. For many years I thought the "real" Santa was actually Scottish.
